What's For Dinner

I am going to try this...and I hope it works. Every week I'm going to post our previous weeks dinner menu, hoping that some of you will comment and leave your dinner ideas/recipes from the previous week too!

I'll keep posting my menus if you will do that for me! Last week was new recipe week, so don't be too impressed...I don't always cook like this.

MONDAY - Mongolian Beef served over fried rice
3 lb. sliced sirloin tip
Marinade of some sort - I used a Teriyaki one
½ c. sugar
¾ c. green onions, chopped
¾ c. soy sauce
1/3 c. sesame seeds
1 ½ tsp. garlic powder
1/3 c. oil

Marinate the meat overnight with the sugar. Just prior to cooking, combine soy sauce, green onions, sesame seeds and garlic powder. Pour over meat and let sit for 10 minutes. Cook the meat in hot oil in frying pan.

*My fried rice didn't turn out that good. I sorta just made up the recipe anyways. Does anyone have a good recipe??

TUESDAY - German Pancakes and hash browns
½ cube butter
6 eggs
1 c. milk
1 c. flour
Dash salt

Melt butter in bottom of 9x13 pan in oven. Blend other ingredients. Pour batter into corners and middle of pan over melted butter. Bake at 400 for 15-20 minutes.

WEDNESDAY - Sweet Pork Salad
1 ½ c. Pace Picante Sauce (salsa)
1 ½ c. brown sugar
1 ½ c. soda pop (your preference)
3-4 lb. Pork loin roast

Combine first three ingredients in saucepan. Heat until brown sugar dissolves. Place meat in crock pot and pour mixture over pork. Cook on low approx. 8-10 hours. *If more moisture is desired, mix together equal parts of the first three ingredients and add to crock pot.

Use fork to pull meat apart and shred it. Serve over tortilla with ranch (from Bajio or Costa Vida) lettuce, cheese, tomatoes, etc.

THURSDAY - Leftovers!
FRIDAY - Out

DESSERT of the week - Texas Sheet Cake
*I don't have that recipe with me, but let me know if you want it.

SNACK - Fruit dip
Mix together 8 oz. cream cheese and 8 oz. of marshmallow cream
Dip bananas, strawberries, kiwis, etc.

wow...if only i could cook lilke that! haha im so excited you just gave me my recipe list for next week!! we are both in rexburg trying to finish but starting in the summer we will both be in school so we will see how that goes...if you guys ever are in rexburg we should get together or vise versa!

I have the recipe for what we had tuesday, it's stu's fave now!

Chicken Broccoli Bake

need:
1 can of cream of chicken
1 can crescent rolls
2 chicken breasts or 6 tenders
1/2 crown of broccoli
1 cup cheddar cheese

cook up the chicken and dice it into cubes. mix the cream of chicken and cubed chicken together in pan and let simmer for few mins. meanwhile, cut up the broccoli into smaller pieces, the size that you might get if you bought frozen broccoli that is already cut up. you can use the stalk too, it's yummy. steam it in the microwave for a few minutes. roll out the crescent roll onto a greased baking sheet so its a long rectangle. Pour half chicken/cream of chicken mixture in the middle going longways, next do the same with broccoli, another layer of chicken mix, and finally a layer of cheese. cut lines into dough on both sides and sort of braid it all together by folding it into the middle (kind of hard to explain..) bake for 13 mins or until the top is golden brown.

it is sooo yummy!

I have an AMAZING fried rice recipe, which I am going to try with your mongolian beef...yuuuum. you will love this recipe. i'll post it tomorrow. I just got excited and had to tell you.

Ok, so here's the Fried Rice:

First whip up 1 1/2 cups 5 minutes rice. Instructions are on box...

2. 3 eggs scrambled together with salt and pepper. Fry 1/2 mixture with oil to keep from sticking. Roll up and cut into tiny slices. Do the same for second half. Put to side.

3. Fry up 3 pieces of bacon. Crumble up into tiny pieces.

4. Dice up 6-7 green onions.

5. Cut 1/2 cup shrimp into small pieces.

6. In frying pan heat (medium heat) 4 TBS of Veg. oil with 2 TBS Ginger. Stir around for a minute. Slowly stir in rice and mix. Stir and fry for 5 minutes. Add eggs, bacon, onions, shrimp and 2 TBS (or more, i like more) Soy sauce. Add a little more oil. Keep frying and mixing in pan for 10 more minutes.....DELICIOUS...Dallin and our friends absolutely love this rice! I normally have to quadruple the recipe whenever I make it.
