Grill Recipe

Kory has been putting his grill to great use the past few months (rain or shine). This is one of our new favorite recipes...

Beef Satay
For the marinade:
1 green onion, finely chopped
1/3 c. ketchup
1/4 c. light soy sauce
3 TB dark brown sugar
3 TB fresh lime juice
1 TB peanut oil
1 tsp grated fresh ginger
1 tsp minced garlin
1/4 tsp red pepper flakes
1/4 c. water

Other ingredients:
1 1/2 pounds Top Round or Beef Tenderloin

1/4 c. creamy peanut butter

Directions: In a small bowl mix together all ingredients for marinade.
Cut the beef into 3/4-inch cubes. Place the cubes in large ziploc bag with marinade. Seal tightly, turn bag over and over to distribute marinade, refrigerate 1-2 hours.

Remove the meat from the bag. KEEP THE MARINADE. Thread meat onto skewers. Allow to stand at room temperature 20 minutes before grilling.

Grill the beef cubes over direct high heat, 3-5 minutes (for medium/rare), turning once halfway through the grilling time.

Pour the reserve marinade into a small saucepan, bring to a boil over high heat. Boil for 1 full minute. Add the peanut butter, return to a boil and whisk until the sauce thickens. Serve warm with beef skewers.

*We have always had it with fried rice. So tasty! We're going to try pizza on the grill next week...send any good recipes our way!!
