What's For Dinner

Nothing too spectacular...but a few ideas.

MONDAY- Tacos with Mexican rice

*I am really picky about mexican rice, but this recipe is super good!
1 ½ c. white rice
¼ c. oil
¼ c. onions
1 tsp minced garlic
Brown above ingredients on the stove before adding…
2 c. chicken broth
1 c. water
½ tsp cumin
2 tsp salt
1 tsp pepper
1 tsp garlic powder
8 oz tomato sauce
Let simmer 20-30 minutes, stirring occasionally.

TUESDAY - Temple/Dinner Date Night!

WEDNESDAY - Filipino Chicken Adobo and baked potatoes
*Kory's mom got a new recipe book with recipes from lots of different countries...this is from that.

1- 24 oz bag frozen chicken drumsticks (can also use boneless, skinless chicken breasts)
½ c. apple cider vinegar
½ c. soy sauce
4 cloves garlic, minced
2 tsp ginger paste (or equivalent amount of grated or powdered ginger)
Pepper to taste

Put frozen chicken pieces in Crock-Pot. Combine remaining ingredients and pour over chicken. Cook 2-4 hours on low heat. Heat 2 TB olive oil in frying pan; remove chicken from Crock-Pot and brown on all sides. Return to Crock-Pot. Continue cooking 2 more hours on low.
*You can skip the first part of Crock-Pot cooking, however, the chicken is more tender and the flavor is better when chicken is cooked as described above. (I cooked it as described above, great flavor!)
Serve over rice (or we did baked potatoes...)

THURSDAY - Take-Out

FRIDAY - Leftovers

SATURDAY - Hamburgers on the grill

SUNDAY- Steak and potatoes (at the in-laws!)

DESSERT - Congo bars
1 c. peanut butter
1 c. karo syrup
1 c. sugar
6-7 c. rice crispies

Heat first 3 ingredients over stove until sugar is dissolved. Pour over rice crispies. Press into 9x13 pan, or onto cookie sheet.
